I mix chopped fresh sage leaves, (I think any favorite herb would work) butter and minced garlic then push it up under the skin. Smoke for the length of time your instructions call for, for the weight of your turkey. The juice that drips into the water pan makes a great sauce though you may have to reduce it a bit for a breast. We do this over apple wood smoke. I have done this with a whole turkey twice.
