Recipe: Festive Chicken Salad Log (using cream cheese, mayonnaise, and hard boiled eggs)

FESTIVE CHICKEN SALAD LOG

FOR THE CHICKEN SALAD:
1 (8 ounce) cream cheese, softened
1/4 cup mayonnaise or salad dressing
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/8 teaspoon ground black pepper
4 drops red pepper sauce
2 cups finely cut-up cooked chicken
2 hard-cooked eggs, chopped
1/4 cup sliced green onion, divided use
FOR GARNISHING:
3 green bell pepper rings
1 tablespoon toasted sesame seed
3 tablespoons sliced or chopped green onion
3 tablespoons chopped pitted ripe olives
3 tablespoons chopped pimiento, drained
Crackers or bread (for serving)

Mix cream cheese, mayonnaise, lemon juice, salt, ginger, pepper, and pepper sauce. Stir in chicken, eggs, and 1/4 cup green onion. Shape into log, 8x2-inches. Wrap in plastic wrap; refrigerate until firm, about 4 hours.

TO GARNISH AND SERVE:
Cut each green pepper ring once to make a curled strip. Place strips diagonally across log, dividing log into fourths. Garnish covering the 1/4 of the log in toasted sesame seed, the next 1/4 of the log with green onion, the next 1/4 of the log with chopped pimento, and the final 1/4 of the log with chopped black olive.

Serve as a spread with crackers or bread of your choice.

Makes 4 servings
