Recipe(tried): Ideas on lobster tail pastry filling

I have tried several times to perfect this cream. I used (no true recipe) just to my taste, a mixture of ricotta and marscapone cheese with fresh whipped cream and confectionary sugar. It came out really really close to the one sold at Mikes pastry in Boston's North End.
