Recipe(tried): Individual Microwave Baked Custards

This is a very simple recipe that we've enjoyed for years. Perfect for one or two because it only makes 4 custard cups. I haven't tried it with egg substitute yet, but I think it should work fine. The one caution is not to overcook it - the custard will separate. I haven't experimented with additions, but I bet cutting back on the sugar and adding some grated cheese and maybe a little well drained chopped cooked broccoli or spinach would make a nice side dish. Or, maybe some diced ham and shredded cheddar for a quick breakfast dish. Or, maybe add some chocolate chips to the bottom before adding the custard mixture. Or, some flaked coconut. I could go on but I won't! I know many of you probably have this or a similar recipe already, but for those that don't...
Individual Microwave Baked Custards
Pour 1 3/4 cups milk into a glass measuring cup or bowl. Heat it for two minutes in the microwave.
Beat together:
3 eggs
1/4 cup sugar
1/8 teaspoon salt
1/2 teaspoon vanilla
ground nutmeg
Add the scalded milk to the egg mixture, beating constantly.
Pour into 4 individual 6 ounce custard cups (if you don't have custard cups micro-safe tea cups will also work). Sprinkle each with a little ground nutmeg (fresh if you have it).
Cook in the microwave, uncovered for 4-5 minutes; stir each cup once each minute of cooking. Cook just until set when jiggled. Don't overcook!
Refrigerate, uncovered for an hour. After that, cover for longer refrigeration. Serve in the cups or unmold onto a plate. If desired, garnish the plate with fresh berries.
