Lettuce Bread
1 cup sugar
1/2 cup oil
2 eggs
1 1/2 tsp. lemon rind, grated
1 1/2 cups all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. ground ginger
1 cup finely chopped lettuce*
1/2 cup chopped nuts
Beat together sugar, oil, eggs, and lemon rind. Add sifted flour, baking powder, salt, ginger and lettuce to sugar mixture. Beat well. Stir in nuts.
Bake in greased 9x5 inch loaf pan at 375 degrees for 55 minutes. Cool 15 minutes in pan. Remove and sprinkle with powdered sugar, if desired.
*May be made from leaf lettuce from the garden or regular head lettuce.
