Recipe: Light Berry Crisp (using oats and ground flaxseed) (blender)

LIGHT BERRY CRISP

1 1/2 cups frozen mixed berries
Juice and zest from 1/2 fresh lemon
1 cup old fashioned oatmeal, uncooked
2 Tbsp. brown sugar
2 Tbsp. all-purpose flour
1/2 tsp. ground cinnamon
1 Tbsp. ground flaxseed
2 Tbsp. canola spread
Cooking spray

Heat oven to 350 degrees F. Spray small casserole with cooking spray.

Place frozen berries in pan. Sprinkle with lemon juice and zest.

In a blender, blend oatmeal, brown sugar, flour, cinnamon and flaxseed. Pulse just until combined. Add canola spread and pulse again just until mixture is crumbly. Spread oatmeal mixture evenly over berries and place in oven.

Bake for 15-20 minutes until berries are bubbling and topping is browned.

Serves 4
