LOUISIANA HOT MUFFINS
2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
2 tablespoons sugar
2 1/4 teaspoons Cajun seasoning
1 egg
1 1/4 cups buttermilk
3 tablespoons butter, melted
1/2 cup cooked, crumbled sausage
Preheat oven to 425 degrees F.
Mix dry ingredients in large bowl.
In smaller bowl, mix wet ingredients. Combine and stir just until moistened. Stir in sausage. Fill greased or paper-lined muffin tins 2/3 full.
Bake in preheated 425 degree F oven about 20 minutes.
