Recipe(tried): Zucchini Bread (with pineapple, raisins, and walnuts)

This recipe makes 2 loaves. Moist and delicious.

ZUCCHINI BREAD

2 cups sugar
1 cup oil OR melted margarine
3 eggs
1 teaspoon vanilla
3 cups flour
2 teaspoon baking soda
1 1/2 teaspoon cinnamon
1 teaspoon salt
3/4 teaspoon nutmeg
1/4 teaspoon baking powder
2 cups grated zucchini
1 (8 1/4 oz.) can of crushed pineapple, juice drained
1 cup raisins
1 cup walnuts

Preheat oven to 375 degrees F. Grease two loaf pans.

Mix together sugar, oil, eggs, and vanilla.

Stir together flour, baking soda, cinnamon, slat, nutmeg, and baking powder. Stir into sugar mixture.

Stir in zucchini, pineapple, raisins, and walnuts. Divide batter into prepared pans.

Bake at 375 degrees for 45 minutes.

Reduce oven to 350 degrees and bake 15-25 minutes longer or until pick inserted in center comes out clean.
