LOW FAT MASHED POTATOES
8 medium-size russet potatoes
1/4 cup non fat milk
1/2 cup nonfat sour cream
1/8 cup chopped fresh parsley
1 tsp onion powder
1/2 tsp garlic powder
Salt and pepper (to taste)
Boil potatoes until soft, drain, cube and mash in a large bowl. Add the remaining ingredients and mash together until well mixed.
LOW FAT GRAVY
1 3/4 cups defatted chicken broth
4 tbsp cornstarch
1 tsp onion powder
1/2 tsp garlic powder
1 tsp seasoning salt
1 chicken or vegetable flavor bouillon cube
Salt and pepper (to taste)
Mix well in saucepan. Cook over medium heat, stirring until smooth.
Makes 4 servings
