Recipe: Mimi's Cafe Brown Butter Bacon Bourbon Sweet Potatoes

BROWN BUTTER BACON BOURBON SWEET POTATOES

8 cups mashed roasted sweet potatoes
2 cups bacon cut in small pieces
1/2 cup butter, melted
1/2 cup brown sugar
1 tbsp kosher salt
2 tbsp bourbon
1/2 cup candied pecans

To roast the sweet potatoes, preheat oven to 425 degrees F.

Using a small paring knife, insert small slits into each sweet potato 8 times. Place on sheet tray. Roast potatoes for 45 minutes.

While sweet potatoes are cooking, cut bacon into small pieces and place in sauce pan over medium heat. Cook bacon until crispy and remove bacon from pan.

When sweet potatoes are finished, remove from oven. Lower oven temperature to 350 degrees F.

Slice potatoes in two and scoop out flesh into medium size mixing bowl. Add only 1 cup of the cooked bacon, melted butter, brown sugar, salt and bourbon. Mix until well combined. Place into casserole dish and garnish with the remaining cup of cooked bacon and candied pecans.

Place in 350 degree F oven for 30 minutes until warmed through and serve.
