Recipe: Make ahead meat

This may be old hat but I make ahead meat for easy meals.
* When I cook ham, I flash freeze it (put it on a cookie sheet first then transfer to a ziplock) in thin slices and cubes. Just grab out a handfull for eggs, cassaroles, pizza, and microwave it to defrost.
* Next time hamburger is at an umbelievable low, buy a bunch and brown it chopped up and then freeze it in Pint bags for spagetti, tacos, hamberger helper.
* One too many pork chops, beef steaks, etc., in the package? Cook it along with dinner, dice and freeze for sandwiches, egg rolls, stir frys. Twice fried meat is delicious if you have never tried it!
* Bacon can be fried ahead, or use leftovers, for that impromptu breakfast in bed or salad or green beans, soup, regular beans, whatever bacon is used for. Same for sausage.
* Take advantage of that half priced hunk of meat that is on sale because it needs to be cooked right away. Don't throw away extra meat, freeze it cooked for all kinds of recipes.

ALWAYS label the meat, date it was cooked originally, frozen, type of meat and check a cookbook for freezing times. Throw away out dated meat-the saying goes: "when in doubt, throw it out".
