Recipe: The Best Hot Fudge Sauce

THE BEST HOT FUDGE SAUCE

1/2 cup heavy whipping cream
4 tablespoons unsalted butter, cut into 4 pieces
1/2 cup packed light brown sugar
Scant 1/4 cup granulated sugar
Pinch salt
1/2 cup unsweetened cocoa powder
1/2 teaspoon vanilla

In a medium heavy saucepan, combine cream, butter, both sugars and salt and bring to a simmer over medium heat, stirring to dissolve sugar. Reduce heat to medium low and simmer, stirring occasionally, 2 minutes.

Reduce heat to low and add cocoa powder, whisking until smooth.

Transfer sauce to a bowl and stir in vanilla.

Serve hot or warm, over ice cream. (The sauce can be refrigerated up to 3 days. Reheat in a double boiler over low heat, stirring frequently, or in a microwave oven.)

Makes about 1 1/4 cups
