MAPLE CHICKEN
"Although there are endless variations for broiled chicken breasts, here's a quick recipe that is easily committed to memory. It's terrific with mashed potatoes, but you could also serve the chicken sliced over a salad or alongside rice and steamed vegetables."
1 1/2 pounds boneless, skinless chicken breast
1 tablespoon vegetable oil, plus additional for the pan
Freshly ground black pepper (to taste)
About 1/2 cup maple syrup, at room temperature
Preheat the broiler. Line the broiler pan with aluminum foil and lightly coat it with oil.
Lightly rub both sides of the chicken with the oil. Press the black pepper into both sides of the chicken.
Broil the chicken for 5 minutes. Carefully remove the pan from the broiler, brush the chicken generously with some of the maple syrup and broil, turning often and basting with the remaining maple syrup, until the chicken is cooked through, about 5 more minutes. Serve immediately.
