Hope this is the recipe Maggie. If you have most of the collection I am also looking for a recipe I lost from mine. It was a recipe for Blackberry Cobbler or some kind of Blackberry dessert. If you can help me with the recipe please post it. Thanks.
MEATBALLS IN MUSTARD SAUCE
1 pound ground beef
1/2 cup finely chopped onion
1/2 cup fresh bread crumbs
1/2 cup milk
1 egg
1/4 cup finely chopped parsley
3 teaspoons fresh thyme leaves
1 clove garlic, minced
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons butter or margarine
2 tablespoons all purpose flour
1 cup chicken broth
3/4 cup whipping cream
3 tablespoons Dijon style mustard
1/2 cup sliced green onions
Mix the ground beef with the onion, bread crumbs, milk, egg, parsley, thyme, garlic, salt and pepper. Shape mixture into about 30 meatballs.
Melt the butter in a large skillet. Add half the meatballs. Cook over low heat until evenly brown, about 10 minutes, shaking pan constantly. Repeat with the other half of the meatballs. Transfer the meatballs to a heated platter. Cover. Keep warm.
Over low heat add the flour to the leftover fat in the skillet. Stir to distribute it evenly over the bottom of the pan. Add the chicken broth little by little. Cook, stirring until thickened.
Add cream, mustard and green onions. Cook until hot.
Add the meatballs to the sauce. Heat. Serve immediately with egg noodles and/or green beans.
