Recipe: Microwave Harvard Beets...Fresh Beets

Microwave Harvard Beets

1 medium bunch beets (about 1 pound)
1 cup warm tap water
1 tablespoon cornstarch
1 tablespoon sugar
3/4 teaspoon salt
dash pepper
2/3 cup water
1/4 cup vinegar

Wash and remove the tops from the beets. Place beets and 1 cup water in 1 1/2 quart casserole. Cover. Microwave at HIGH 10-12 minutes, until fork tender. remove beets from oven and place in cool water. Peel and slice or cube as desired.

In same casserole, stir together cornstarch, sugar, salt, pepper, water and vinegar. Microwave at HIGH 3-4 minutes, until thickened, stirring after 2 minutes. Add beets and Microwave at HIGH 5-8 minutes, until hot.
