Recipe: Microwave Harvard Beets

Microwave Harvard Beets

1 can (1 pound) diced or sliced beets
1/4 cup sugar
1 tablespoon cornstarch
1/2 teaspoon salt
freshly ground pepper to taste
1/4 cup vinegar

1. Drain beets, reserving liquid. Pour beet liquid into a 1-cup measure and add enough water to make 1 cup liquid.2. Combine sugar, cornstarch, salt, pepper, and vinegar in a 1-quart casserole or bowl. Stir in beet liquid.3. Cook, uncovered, on HIGH for 2 1/2 to 3 minutes, stirring occasionally, until mixture thickens and is clear.

4. Add beets and stir lightly.

5. Cook, covered, on HIGH for about 3 minutes, or until beets are piping hot.
