Recipe: Oatmeal Pancakes (Coach's Oats)

I found a recipe for Coach's Oats Pancakes from the Coach's Oats website. This is NOT the Polly's Pie recipe but perhaps you tweek it (adding the raisins and pumpkin). Good luck and please share your results with us.

COACH S OATS PANCAKES MENU DESCRIPTION

Two fluffy pancakes made with a healthy blend of Coach s Oats all natural oatmeal, raisins and pumpkin. Served with two eggs and your choice of two strips of Applewood smoked bacon or two sausage links.

OATMEAL PANCAKES (COACH'S OATS)

2 cups all-purpose flour
1 cup uncooked Coach's Oats
1 tsp. baking soda
2 tsp. baking powder
1/2 tsp. salt
1/4 cup sugar
2 eggs
2 tsp. vanilla
1 cup milk
1 cup water

In a mixing bowl, stir together dry ingredients.

In another bowl, combine eggs, vanilla, milk and 1 cup water. Add liquid to dry ingredients. Stir mixture until well blended.

Pour 1/4 cup batter into a hot, lightly greased griddle for each pancake. Cook both sides until golden brown.

Makes 16-18 pancakes
