FOR THE MARINATED ONION:
1/4 red onion, sliced
3 tablespoons red wine vinegar
FOR THE SPINACH PESTO:
1 clove garlic
1/4 cup walnuts
5 cups spinach (about 5 oz)
1 tablespoon chicken stock
1 tablespoon olive oil
Salt and pepper (to taste)
FOR THE CHEESE-OLIVE SPREAD:
4 oz light cream cheese, softened
1 1/2 teaspoons Italian seasoning
1/8 cup Kalamata olives, chopped
FOR THE SANDWICHES:
8 slices Arnold Natural 100% Whole Wheat bread
1 1/3 cups cooked chicken (Rotisserie chickens work well)
Pour the red wine vinegar over the red onion and let marinate. Marinate at least 10 minutes, but the longer the better.
In a food processor, pulse the clove of garlic. Add the walnuts and finely chop. Add the spinach and pulse until finely chopped. Add the chicken stock and olive oil and then season with salt and pepper to taste.
In a small bowl, mix the cream cheese, Italian seasoning and Kalamata olives. Spread that mixture on one slice of bread and the spinach pesto on another slice. Add 1/3 cup cooked chicken and sliced red onion. Put together.
Makes: 4 sandwiches, but the ingredients keep if you only want to make one
