Recipe: Mykonos Restaurant Greek Chicken Ke Bobs

GREEK CHICKEN KE BOBS FOR 4

2 pounds skinless and boneless chicken breasts
MARINADE INGREDIENTS:
Olive oil
Oregano or Thyme
Salt and pepper
FOR THE KE BOBS:
2 large green bell peppers, cut into 1 squares
2 large tomatoes, cut into wedges
1 large onion, cut into wedges
Wooden skewers (soaked in water for 15 minutes)

Cut chicken into strips and marinate in refrigerator in above mixture of olive oil, oregano or thyme, and salt and pepper at least two hours.

Alternate green peppers, chicken, onion and tomatoes on skewers.

Can then be cooked on grill or in cast iron frying pan.

Serves 4
