I had a friend of mine turn me on to this Jalapeno recipe. I really like it and it's so easy.

1 cup finely chopped summer sausage of your choice
Place in microwave and heat till all the oils have seperated and drain well (about two minutes)

Plit peppers along one side and remove seeds from about twenty peppers.

2 cups cubed Monterey Jack cheese

Place cheese into bowl and microwave till melted, then mix with sausage and stuff peppers. Place in refrigerator and serve cold. Your guest will love them.
