I saw a question about a lost recipe. This is the Nestle Quick fudge recipe my mother got off of a container either in the early 50s or late 40s. I have been making this fudge for about 50 years.
NESTLE QUICK FUDGE
2 cups sugar
1 cup whole milk
1/2 cup Nestle Quick Cocoa powder*
3/4 cup salted butter
Combine the ingredients in a saucepan and let the mixture come to a boil and boil until a firm soft ball stage.
Pour into a mixer bowl and beat on high speed until it reaches eating consistency.
Turn out onto a buttered plate. Cut and eat.
VARIATIONS:
BROWN SUGAR FUDGE
To make brown sugar fudge, substitute brown sugar for the cocoa powder. (Tip: grated Piloncillo for the brown sugar makes a super creamy fudge)
PEANUT BUTTER FUDGE:
To make peanut butter fudge, substitute peanut butter for the cocoa powder.
*One note on the chocolate fudge: The current makeup of Nestle Quick seems to create a fudge not as creamy as it used to be. I think I am going to experiment with other cocoa next.
