Recipe: Night Market Noodles (Chinese)
Misc.NIGHT MARKET NOODLES
Noodles can be eaten hot or at room temperature.
FOR THE SAUCE:
3 tablespoons plus 1 teaspoon dark soy sauce, preferably Chinese
1/4 cup plus 1 tablespoon smooth-style peanut butter
2 tablespoons grated fresh ginger root
2 tablespoons white rice vinegar
2 tablespoons sugar
2 tablespoons dark Asian sesame oil
1 tablespoon plus 1 teaspoon Asian hot chili oil
2 large garlic cloves, minced
1 pound fresh Chinese noodles (or dried thin spaghetti)
FOR THE TOPPING:
1/2 cup thinly sliced green onions (optional)
In a small bowl, stir together all sauce ingredients, mixing well.
Add noodles to a large pot with 4 quarts of unsalted boiling water and cook according to package directions, 3 to 5 minutes for fresh noodles, 10 to 12 ..' minutes for uncooked spaghetti.
Drain noodles and immediately toss with sauce in a large bowl. If preferred, sauce can be spooned over noodles and diners can stir it into the hot noodles. Sprinkle servings with green onions, if desired.
