Wafer Substitute for Torrone

Wafers for Torrone:
The purpose of the wafers is so the candy can be eaten with an edible cover. Another substitute instead of waxed paper or plastic wrap, which still leaves the surface sticky after it is peeled off, is to use edible rice paper on the top and bottom before it is cut. You can find it at stores dedicated to candy making supplies.
