NON-DAIRY/VEGAN SUBSTITUTIONS FOR BUTTERMILK IN RECIPES
"SOUR" NON-DAIRY MILK:
Just as sour milk can be substituted for buttermilk in recipes, you can make sour non-dairy (unsweetened, unflavored) "milk" to use as a substitute by adding 1 tablespoon vinegar or lemon juice to 1 cup non-dairy "milk" (soy, almond, rice, etc.). Let the mixture stand a few minutes before adding to the recipe.
NON-DAIRY SOUR CREAM:
To substitute vegan sour cream for buttermilk, stir together 1/2 cup vegan sour cream and 1/2 cup water until smooth.
TOFU:
For 1 cup buttermilk substitute:
Soft tofu: Combine 3/4 cup tofu with 1/4 cup water, 1 tbsp. lemon juice or vinegar, and a pinch of salt.
Medium firm tofu: Combine 1/2 cup tofu with 3/4 cup water, 1 tbsp. lemon juice or vinegar and a pinch of salt.
Extra firm or silken tofu: Combine 1/4 cup tofu with 3/4 cup water, 1 tbsp. lemon juice or vinegar, and a pinch of salt.
