Recipe: Cinnamon Breakfast Bites

CINNAMON BREAKFAST BITES

1 1/3 cups all-purpose flour
1 cup crispy rice cereal, coarsely crushed
2 tablespoons sugar
1/2 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
1/4 cup butter-flavored Crisco
1/2 cup milk
1 teaspoon ground cinnamon
1/4 cup butter or margarine, melted

In a bowl, combine the flour, cereal, 2 tablespoons sugar, baking powder and salt; cut in shortening until mixture resembles coarse crumbs.

Stir in milk just until moistened. Shape into 1-inch balls.

In a bowl, combine cinnamon and 1/2 cup sugar. Dip balls in butter, then roll in cinnamon-sugar. Arrange in a single layer in an 8-inch round baking dish.

Bake at 425 degrees F for 15-18 minutes or until a toothpick comes out clean.

Makes 2 1/2 dozen, six servings
