SPICED BAKED APPLES WITH CRANBERRIES

"Arrange these colorful apple halves around a crispy roast goose for an attractive platter."

1/2 cup lightly packed brown sugar
3/4 cup boiling water
2 tablespoons fresh lemon juice
1 pinch cinnamon
1/4 cup butter
4 tart apples
1/4 cup fresh cranberries (approximately)

Preheat oven to 325 degrees F.

In small saucepan, mix together sugar and butter; add boiling water. Stir over high heat until butter is melted and sugar dissolved; reduce heat to medium and boil, uncovered, for 7 minutes.

Meanwhile, peel apples and halve lengthwise. Carefully remove cores, leaving round depression in each half. Arrange in single layer, cut side up, in pie plate; sprinkl3e with lemon juice as you work. Place 3 or 4 cranberries in each half.

Pour sugar syrup over apples; sprinkle with cinnamon.

Bake, uncovered, basting often, in 325 degree F oven for about 30 minutes or until apples are soft but not mushy. Remove from oven; baste again. Serve warm.

Makes 8 apple halves.
