ORANGE-PUMPKIN CAKE
FOR THE CAKE:
1 (2-layer-size) yellow cake mix
3 egg whites
1 1/4 cup canned pumpkin puree
1 cup orange juice
1/3 cup sour cream
1 1/2 teaspoons vanilla
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground allspice
FOR THE GLAZE:
1 1/2 cups powdered sugar
1/4 teaspoon vanilla
Water (as needed)
Preheat oven to 350 degrees F.
Mix together all the cake ingredients together 2-3 minutes. Pour into a greased-and-floured Bundt pan.
Bake 35-40 minutes. While hot, invert cake onto serving platter. Drizzle over cake. Cool.
TO MAKE THE GLAZE:
Mix powdered sugar and vanilla, and gradually add water a tablespoon at a time until it reaches desired consistency.
