POTATO CAKE
1 cup butter, softened
2 cups sugar
4 eggs, separated
1 cup cold, mashed potatoes
2 cups unsifted Swans Down cake flour
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. soda
1/2 tsp. allspice
1/2 tsp. cloves
1/2 tsp. salt
2 squares (1 ounce each) unsweetened chocolate, melted
1 tsp. vanilla
1/2 cup raisins
1/2 cup nuts
Preheat oven to 350 degrees F. Grease 2 layer cake pans and 1/2 dozen cupcake tins or 3 layer cake pans.
Cream butter and sugar well. Add egg yolks and beat. Add the potatoes and beat until fluffy.
Combine flour, spices, and salt. Add all at once to creamed mixture and beat. Fold in melted chocolate and vanilla.
Add raisins and nuts which have been tossed with a little flour.
Fold in stiffly beaten egg whites. Pour into prepared pans.
Bake at 350 degrees for 25-30 minutes.
Frost with a Caramel Icing.
