Recipe: Oven-Roasted Peppers (Pepperoni al Forno) (baked with tomato sauce)

2 red bell pepper
2 green bell peppers
1 bunch basil leaves, chopped
3 tbsp. capers preserved in vinegar
extra-virgin olive oil
2 cups tomato sauce
bread crumbs
Preheat the oven to 350 degrees F.
Lightly roast the peppers, remove the skins, stems, seeds and filaments and cut them in long strips. Chop the basil leaves.
Pour some oil in a baking dish and put in a layer of peppers. Pour over tomato sauce and sprinkle with basil and capers. Repeat the process until all the ingredients have been used, ending with a layer of sauce, dotted with basil and capers. Baste with oil, sprinkle bread crumbs over top.
Bake in a 350 degree F oven for about 30 minutes.
Makes 4 servings
