Recipe: Baked Sweet Potatoes with Spiced Butter and Pecans (make ahead)

BAKED SWEET POTATOES WITH SPICED BUTTER
"Keep this tasty butter on hand for muffins, pancakes or toast!"



6 medium-sized sweet potatoes
FOR THE SPICED BUTTER:
1/2 cup butter OR margarine, softened 1/4 cup brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon Spice Islands Ground Nutmeg
1/8 teaspoon Spice Islands Ground Chipotle Chile
2 tablespoons chopped pecans, toasted (for serving)

Preheat oven to 350 degrees F.

Wash and prick potatoes. Bake for 1 hour or until tender.

Whip butter, brown sugar, cinnamon, nutmeg and chipotle in a medium bowl with a hand mixer. Cover and chill until ready to serve.

Split potatoes and top with a generous dollop of Spiced Butter. Sprinkle pecans over the top.

TO MAKE AHEAD:
The Spiced Butter may be stored in the refrigerator up to 2 weeks.
