Penne with Vodka and Tomato Cream Sauce
1 T Butter
1 T olive oil
1 small onion chopped
1 28 oz can Italian Plum Tomatoes, drained, seeded and chopped
1 cup whipping cream
1/4 cup Vodka
1/4 t red peppers, dried and crushed
1 lb. penna pasta
freshly grated parmesan cheese
minced fresh chilles
Melt butter & oil in heavy pan over med heat. Add onion and saute until translucent, 8 minutes. Add tomatoes and cook until almost no liquid remains, stiring frequently, 25 minutes. Add cream, vodka, and red pepper. Boil until thickened to sauce consistency, 2 minutes. Season to taste with salt and pepper. Cook pasta in large pot of water until tender--al dente. Drain well. Pour sauce over pasta and toss well. Sprinke with parmesan cheese and chilles and serve.
