RICE BURGERS
1 cup cooked brown rice
1 tablespoon chopped parsley
1/3 cup grated carrot
Dash each: salt, ground black pepper and garlic powder
2 tablespoons flour
1 unbeaten egg
Olive oil (for frying)
FOR SERVING:
Whole wheat hamburger buns
Fresh tomato slices
Lettuce
Red onion slices
Mix rice and parsley with grated carrot and seasonings. Mix in flour and egg.
Fry in olive oil, flip once.
Serve on wheat buns with tomato, lettuce and red onion.
