Recipe: Pineapple Drop Cookies (with nuts and raisins, 1960's)

PINEAPPLE DROP COOKIES


1/2 cup butler or margarine, softened
1 cup light brown sugar, packed
1 egg
1 teaspoon vanilla extract
3/4 cup undrained crushed pineapple
2 cups sifted flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup raisins
1/2 cup chopped nuts

Cream butter until light and fluffy. Gradually add sugar and beat well. Beat in egg and vanilla.

Stir in pineapple, sifted dry ingredients, raisins and nuts. Drop by teaspoonfuls onto greased cookie sheets

Bake in moderate oven (375 degrees F) for 12 minutes, or until lightly browned.

Makes 54 cookies
