Recipe: Pita Pizzas (serves 2)
Pizza/FocacciaPITA PIZZAS
1/3 cup tomato sauce
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon ground black pepper
1/4 teaspoon garlic powder
1 (6-inch) whole-wheat pita bread sliced into two rounds
2 ounces skim-milk mozzarella
1 cup chopped vegetables (see tester's note)
1 teaspoon grated Parmesan cheese
Preheat oven to 500 degrees F. Stir together tomato sauce, basil, oregano, pepper and garlic powder; set aside.
Set pita halves on oven rack until slightly crisp (about 5 minutes). Remove from oven.
Place pita halves on a cookie sheet or foil. Top with mozzarella cheese and vegetables. Drizzle with sauce; sprinkle with Parmesan cheese.
Bake for 10 to 15 minutes or until cheese melts.
Yield: 2 servings
Approximate nutrition information per serving: 199 calories; 6g fat (25 percent calories from fat); 17mg cholesterol; 12g protein; 27g carbohydrate; 4.5g fiber; 566mg sodium; 230mg calcium.
