QUICK AND EASY PUMPKIN CUPCAKES
1 (18.25 oz) package spice cake mix -
1 (15 oz) can Libby's 100% Pure Pumpkin
3 large eggs
1/3 cup vegetable oil
1/3 cup water
1 (16 oz) container prepared cream cheese frosting
Preheat oven to 350 degrees F.
Blend cake mix, pumpkin, eggs, oil, and water in large mixer bowl until moistened. Beat on medium speed for 2 minutes. Pour batter into 24 paper-lined muffin cups. Fill 3/4 full.
Bake in preheated 350 degree F oven for 16-20 minutes or until wooden pick inserted in center comes out clean. Cool in pan for 10 minutes; remove to wire racks to cool completely.
Spread cupcakes with frosting. Decorate as desired.
Makes 24 cupcakes
