Hi Nicole: You can't go wrong with a pork tenderloin.
Buy a 1 lb or 1 1/2 lb. unseasoned pork tenderloin. Season with salt, pepper & garlic powder. Pour about 8 oz (1 cup) of apple juice over it.
Put in a 350 degree F oven in a baking dish covered with foil. Leave foil on for 1/2 hour.
In a small bowl blend together apple butter, 1 Tbsp of brown sugar and an oz or two of apple juice, 1 teaspoon of rice wine or apple vinegar. If you like garlic powder, you put a bit in.
After the pork has cooked for a half hour, remove foil and cover the pork with the apple butter mixture. I reserve some of it for extra sauce at the table.
Continue to roast about another 20 minutes (depends on size of meat) or until a meat thermometer reaches required temperature. The meat is done when the juices run clear.
Serve with extra apple butter sauce, green beans, salad and biscuits.
