Recipe(tried): preparing beef heart

When we had our own cows the heart was one of my favorite meals. I used to wash it and trim oof the fat and then cut it into serving pieces. After that I would dredge it in seasoned flour (salt and pepper etc) then I would brown the pieces in my electric skillet. Finally I would add a bit off water to the skillet and turn the heat down and let it simmer for about half an hou with the lid on to make it tender.
