Recipe: Beef Heart in Tomato Sauce

A Nigerian friend of mine simmers it in a rich tomato and red pepper sauce for
about an hour or so. I think you just make the sauce like a regular pasta
sauce, but with the addition of red sweet peppers and tabsco too. Simmer the
sauce for half an hour or so, until the peppers break down, and then add the
hearts - simmer ntil they are tender. Abbey used to add in onions and garlic
and chillies too.
