Recipe: Re: ISO Japanese Curry

Misc.

Hi Robby
Easiest way to prepare Japanese curry is to buy a "curry mix" at a Japanese grocery store and to follow the direction on the package. If you don't have an access to it, you can make your own from a scratch which can taste far better than package curry.
Meat (beef is the best...better with bones)
2 tbsp oil
Water
4-5 beef bouillon
1/4 C butter or margarine
1/4 C flour
4-5 tbsp curry powder
Garlic
Stew vegetables, cut in chunks (I usually use potatoese, onions and carrots)
Salt and pepper
Brown the meat in 1 tbsp of hot oil and take it out. Add remaining oil, dump all the vegetables, and saute for a few minutes. Put the meat back in the pot and add water just to cover the meat and vegetables. Add bouillon cubes and cook in a low heat for a few hours until meat falls off the bones (and veggies may be crumbling). You can add some more water as you cook it. Take out the bones and cut the meat in bite-size. Save the soup!!
In a frying pan, heat butter (but don't burn it) and add flour and curry powder (this is roux) . Saute the roux for a few minutes in low heat without burning it, and start adding some soup from meat/veggie pot, and finally put the diluted roux back into the meat pot. Salt and pepper to taste, and add garlic. Cook in low heat for a few hours stirring occasionally until the spice and meat/veggie flavor blend. Serve over white steamed rice. This is a very flexible recipe, so you can add pretty much any spices or vegetables you want.
