Recipe: Re: Spiced Apple Pork Roast

Hi Jennifer! Saw your request, and maybe this will help. Although I haven't
tried it YET, intend to, as I, like you, want a really good pork roast recipe.
I found this one in a brand-new book "The Complete Guide to Country Cooking"
from Taste of Home. Here's the recipe:
Spiced Apple Pork Roast
1 cup applesauce
1/3 cup packed brown sugar
2 teaspoons vinegar
1/8 to 1/4 teaspoon ground cloves
1 rolled boneless pork loin roast (3 to 4 pounds, trimmed)
1 garlic clove, cut into lenthwise strips
2 Tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon sugar
1/8 teaspoon pepper
1 teaspoon prepared mustard

In a small bowl, combine applesauce, brown sugar, vinegar and cloves; set aside.
Cut slits in top of roast; insert garlic strips. Combine flour, salt, sugar,
pepper and mustard; rub over roast. Place roast on a rack in a shallow roasting
pan. Bake, uncovered, at 350 degrees until a meat thermometer reads 160
degrees.(*). Brush applesauce mixture over roast during the last half hour of
baking. Remove roast to a warm serving platter. (Can make gravy from pan
drippings if desired.) Yield: 8-12 servings.
(*) Roasting times:
Loin Roast - with bone, 3 to 5 # 160% 1 to 1 3/4 hours
Loin Roast - boneless 2 to 4 # " 40 to 80 minutes
Tenderloin - 1/2 to 1 " 20 to 30 minutes
Crown Roast- 6 to 8 # " 2 to 3 hours
Shoulder/Boston Butt 3 to 6# 160-170 2 1/4 to 4 3/4 hours
