Recipe: Recipes: Fruit and Nut Macaroons

Misc.

Hi Debbie,

Here are a couple recipes from the Cookbook USA CD
that sound similar to what you're describing.

Happy baking!

Betsy

Magic 6 in 1 Cookies

3 c. sifted all purpose flour
3 tsp. baking powder
3/4 tsp. salt
3/4 c. butter, melted
2 eggs
1 tsp. vanilla extract
15 oz. Eagle Brand sweetened condensed milk

OPTIONAL FLAVORING:

Use only one of the following:

1 c. semisweet chocolate pieces
1 1/2 c. seedless raisins
1 1/2 c. cornflakes
1 1/2 c. toasted shredded coconut
1 1/2 c. coarsely cut dried dates
1 1/2 c. coarsely chopped nut meats

Into a large sized mixing bowl sift blended dry ingredients. Stir in remaining ingredients except optional flavoring. Fold in one of the optional flavorings. Drop level tablespoons about 2 inches apart on greased cookie sheet. Bake at 350 degrees until cookie edges are lightly browned, 8 to 10 minutes. Remove at once from cookie sheet. Makes 4 dozen 2 1/2 inch diameter cookies.

Fruit Balls or Cubes

14 oz. can sweetened condensed milk
6 oz. chocolate chips
1 1/2 lbs. dates, cut up
8 oz. coconut
1 lb. mixed candied fruit, cut up
1 c. walnuts, coarsely chopped

Combine all ingredients and place in a greased 10"x15" pan. Bake 15 minutes at 375 degrees. Either cut in squares, roll in balls. Sprinkle a little powdered sugar over them.
