Recipe: Red Velvet Cake

Red Velvet Cake
1/2 c. oil
1 1/2 c. sugar
2 eggs
1 1/2 tsp. vanilla
2 1/4 c. flour
1/2 tsp. salt
1 c. buttermilk
1 tsp. baking soda
1 T. vinegar
3 T. cocoa
1 oz. red food coloring
1 oz. water
Combine cocoa and food coloring. Combine baking soda and vinegar. Cream shortening and sugar; add vanilla and eggs and beat well. Add chocolate mixture. Alternate flour and salt with buttermilk. Mix in soda and vinegar mixture and mix well. Bake in a 9x13 pan or 2 9-inch layers for 30 minutes at 350 degrees. Cool and frost with cream cheese frosting.
Frosting:
8 oz. cream cheese, softened
1/2 c. oleo or butter
2 tsp. vanilla
2 lb. powdered sugar
Combine cream cheese, butter and vanilla and beat well. Beat in powdered sugar until of a spreading consistency.
