Raspberry Truffle Tart (with photo)
This dark and lovely tart is adapted from a recipe in Bake It to the Limit, by, Dede Wilson. It s like a big truffle with a luscious raspberry ganache filling and whole ripe raspberries in and above the truffle mixture. Scatter just a few raspberries for an elegant garnish, or use a few more to make a pretty pattern.
One Big Hazelnut Shortcake with Caramel Berries (with photo)
This dessert is dedicated the great state of Oregon, and all those growers of the best berries and fabulous hazelnuts, or filberts. You can use either room temperature or warm (but not too hot) caramel sauce. If it's warm, be ready to serve the dessert immediately after stirring the berries and sauce together.
Easiest Berry Terrine (with photo)
This simple but stunning terrine Is delightful served with 8trawberry or Raspberry Whipped Cream or a dollop of creme fraiche, but it may possibly be even better with berry or other fruit sorbet. You could also use pomegranate juice (Pain Wonderful brand is excellent) or a favorite sweet wine instead af the cranberry juice cocktail. If you use strawberries, choose small ones and slice or quarter them. The terrine will slice better if you use smaller berries. My favorite berry mix here is a combination of tiny wild blueberries, raspberries, and blackberries.
