Recipe(tried): Saturday Night Supper - Julie's Tortellini Soup, Easy Italian Sausage Sandwiches

It is hot, hot, hot in southern Alabama, but I wanted some of Julie's Tortellini Soup. For supper we had, along with the soup, Easy Italian Sausage Sandwiches, cold watermelon chunks, sweet tea with lemon, and raspberry Jello.

Julie's Tortellini Soup is absolutely delicious. If you haven't tried it, try it soon!

JULIE'S TORTELLINI SOUP

2 large onions, chopped
1 can mushrooms, drained
4 cans beef broth (I use Swanson's Beef Broth seasoned with onions)
1 (9 oz.) pkg. refrigerated tortellini(I used Di Giorno Mozzarella and Garlic)
1/4 cup white wine
1 pkg. fresh spinach, chopped
2 tbsp. olive oil
1 tsp. minced garlic

Saute chopped onions, mushrooms, and garlic in the olive oil. When onions are transparent, add the beef broth and the wine. Bring the beef broth and wine to a rolling boil. Add the tortellini. Let cook for 6-7 minutes or until tortellini is done. Add the spinach and heat through.

EASY ITALIAN SAUSAGE SANDWICHES

4-6 sweet Italian sausages
1 yellow bell pepper, cut into thin strips
1 red bell pepper, cut into thin strips
1 tsp. minced garlic
1 can Swanson Beef Broth--flavored with onions
1 tsp. olive oil
1 large onion, sliced and separated into rings

Heat the olive oil in a large skillet. Add the bell peppers, onions, and garlic. Saute until onions are transparent. Add the beef broth and the Italian sausages. Cook on medium until the sausages are done--15-20 minutes.

When sausages are done, serve on hoagie rolls along with the bell peppers and onions. Top with Italian Blend cheese.
