Recipe(tried): Shrimp and Madarin Salad with Creamy Mustard Dressing

Here is a favorite of mine. It's as close as I can come to the house
salad at the Roof Top restaurant in Bonita Beach,Florida.

3 different salad greens, red leaf, boston, endive, ect. try not to
use iceburg.
10 to 12 small shrimp, cooked and peeled
12 oz. fresh mushrooms, thinly sliced
2 or 3 fresh mandarine oranges, sectioned (you may used canned,drained)

Creamy Mustard Dressing
2 hard cooked eggs, (finely mashed while warm)
1/2 teaspoon salt
1 1/2 teaspoon sugar
1 teaspoon pepper
1 clove garlic crushed
1/2 cup virgin olive oil
1 tablespoon dijon mustard
5 tablespoons heavy cream,(do not substitute milk)
1/4 cup red wine vinegar
Blend all ingredients well. Better if left to set several hours or
overnight.
