Below is a recipe I haven't tried. I notice that it doesn't contain salt, which seems unusual, as conventional snickerdoodle recipes do call for a little. I might be tempted to add about 1/2 teaspoon if I were trying this.
SNICKERDOODLES
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
3/4 cup shortening
3/4 cup white sugar
1/2 cup brown sugar
1 egg, beaten
1/4 cup evaporated milk
2 tsp. vanilla
1 tsp. salt
FOR ROLLING DOUGH:
1/4 cup sugar plus 1 tablespoon ground cinnamon
Stir together flour, baking powder, baking soda; set aside.
Beat together shortening and sugars till light; mix in the egg. Add evaporated milk, and vanilla. Stir in dry ingredients. Chill dough 60 minutes.
WHEN READY TO BAKE:
Preheat oven to 350 degrees F. Lightly grease baking sheets.
Roll dough into walnut-size balls. Roll in mixture of 1/4 cup sugar mixed with 1 tablespoon cinnamon. Place on prepared baking sheet.
Bake at 350 degrees F for about 12-13 minutes.
