Recipe: Sopa Marisco ( a Mexican seafood soup

Sopa De Marisco El Diablo
Serves 4.

8 jumbo shrimp, peeled
12 sea scallops
16 mussels
16 clams
1 1/3 qts. fish stock
1/3 cup TABASCO brand Habanero Pepper Sauce
2 2/3 tablespoons garlic, chopped
1/3 cup onion, diced
2 2/3 tablespoons red bell pepper, diced
1 1/4 cup fresh spinach
1 1/3 tablespoons olive oil
2/3 cup dry white wine
2 lemons, juiced

In a soup pot, saut garlic, onion and bell pepper in olive oil. Once peppers and onions are tender, deglaze with white wine and reduce by half. Add fish stock and bring to a simmer. Add mussels and clams and let soup come to a simmer again, then add shrimp and scallops. Simmer two more minutes. Add lemon juice, spinach and TABASCO brand Habanero Pepper Sauce. Serve immediately.
