Recipe: Sour cream substitutions

Hi, Valerie!

Just a few thoughts. You might try:

- mascarpone cheese -- a mild and delicious white cheese, softer than cream cheese and without the "tang."

- heavy (whipping cream) or evaporated milk too.

- coconut milk (not coconut cream) - I once was making my favorite halibut recipe, which calls for a sauce made with sour cream, wasabi powder and water. I had no sour cream in the fridge, so I used canned coconut milk (coconut milk -- not coconut cream) and had excellent results.

I am curious to find out how your results come out if you try the mascarpone, so please do post back.
