Recipe: Lettuce Wrap Meatballs (using ground turkey, food processor)

LETTUCE WRAP MEATBALLS

"Great snack food or party fare, these wraps are full of flavor and good for you. Kids love to help put them together."

1 shallot, quartered
4 green onions, trimmed
4 cubes frozen crushed garlic
1 jalapeno chile, seeded and chopped
1/4 cup chopped fresh cilantro
1 pound ground turkey
3 tablespoons soy sauce
1 tablespoon brown sugar
Freshly ground black pepper
GARNISHES:
2 Persian cucumbers, chopped
handful of shredded carrots
8 fresh basil leaves, sliced into chiffonade
Trader Joe's Sweet Chili Sauce
1 (12 ounce) bag Trader Joe's "Just the Leaves" romaine lettuce

Preheat the oven to 425 degrees F and line a rimmed baking sheet with parchment paper.

In a food processor, finely chop the shallot, green onions, garlic, jalapeno, and cilantro.

In a medium bowl, combine the chopped vegetables with the ground turkey. Add the soy sauce, brown sugar, and a few grinds of pepper and mix to combine. Form into walnut-size meatballs and place on the prepared baking sheet.

Bake until cooked through, 15 to 20 minutes.

Place the cucumbers, carrots, basil, and chili sauce in separate bowls. Serve the meatballs in the lettuce leaves and pass the garnishes for each person to assemble their own wrap.

Makes 4-6 servings
