Recipe(tried): Spiced Lentil Soup

Here is an easy soup that is so good. If you use a lite coconut milk (I love Trader Joe's), you'll shave 11 grams of fat from each serving (from 337 cal/17 gr. fat for regular coconut milk down to 228 cal/6 gr. fat for lite coconut milk per serving), and even my picky palate doesn't know the difference!

Spiced Lentil Soup

2 onions -- chopped
2 cloves garlic -- crushed
14 ounce canned tomatoes -- chopped
1/2 teaspoon ground turmeric
1 teaspoon ground cumin
6 each cardamom pods
1/2 each cinnamon stick
8 ounces lentils
14 ounces lite coconut milk
1 tablespoon fresh lime juice
2 teaspoons salt (or to taste)
1/4 teaspoon pepper

Combine onions, garlic, tomatoes, turmeric, cumin, cardamoms, cinnamon and lentils into a saucepan with 3-1/2 cups water. Bring to a boil, lower heat, cover and simmer gently for 20-30 minutes or until the lentils are soft.

Remove the cardamoms and cinnamon stick, then puree the mixture. Return to pan. Add coconut milk and lime juice. Stir well. Season with salt and pepper. Reheat the soup gently without boiling.
